Production Process
Generally, a whole cold chain process is adopted:
- Picking and Sorting: Workers pick ripe acerola cherries by hand and then sort them to remove damaged fruits and others.
- Cleaning and Drying: It undergoes primary low-temperature cleaning, secondary low-temperature cleaning and then low-temperature drying.
- Juicing and Stirring: Low-temperature juicing is carried out, and then the components are stirred to make them evenly mixed.
- Concentration and Drying: Spray drying and other methods can be used to remove the water in the acerola cherry juice and form powder.
