Cleaning and Pretreatment
Firstly, kiwifruits should be thoroughly cleaned to remove the dirt, impurities and microorganisms on their surfaces. Then, the skins are removed because the skins of kiwifruits are rather rough and contain a relatively large amount of cellulose, which would affect the taste and fineness of the juice powder. After the skins are removed, the flesh of the kiwifruits can be cut into small pieces for the convenience of the subsequent juicing operation.
Juicing
The juice is obtained from the flesh of kiwifruits by means of physical pressing. During this process, efforts should be made to minimize the incorporation of fruit pulp residues to ensure the purity of the juice. The kiwifruit juice can be extracted efficiently while most of the nutritional components therein can be retained.
Filtering
The freshly squeezed kiwifruit juice contains some impurities such as fruit pulp fibers and seed fragments, so it needs to be filtered through filtering equipment. Use the filtering equipment to remove these impurities to obtain clear and transparent kiwifruit juice. The filtered juice has a smoother taste and can maintain good fluidity and solubility after being made into juice powder.
Concentration
The filtered kiwifruit juice contains a large amount of water. In order to facilitate the subsequent drying process, it needs to be concentrated.
Drying
The concentrated kiwifruit juice can be spray-dried. The concentrated kiwifruit juice is sprayed into fine mist-like droplets through an atomizer. Under the action of hot air, the water evaporates rapidly and kiwifruit powder is formed.
Nutritional Components
It is rich in vitamin C, vitamin E, vitamin K, minerals, dietary fiber, organic acids and carbohydrates. The carbohydrates are mainly monosaccharides such as glucose and fructose, which can provide energy for the human body. Meanwhile, the kiwifruit juice powder also contains organic acids like malic acid and citric acid, which endow kiwifruits with their unique sweet and sour taste.
